More protein sounds simple enough, until you have to make it taste good. This week, new research looks at how vanilla could help tackle the flavor challenges that come with higher-protein foods, putting a familiar ingredient to work on a surprisingly practical problem.

The formulation challenge continues in other ways, too. One precision fermentation company has cut the cost of producing animal-free myoglobin by 613-fold, while new work suggests crude glycerol could offer a cheaper feedstock for fermentation, although lower input costs do not automatically translate into better performance. How much can smarter process economics change the picture?

Meanwhile, the startup pipeline remains active. A new cohort of 15 food-tech companies is bringing together approaches spanning cultivated seafood, fermentation, alternative fats and next-generation plant proteins. On the ingredient side, an upcycled carrot prebiotic has also cleared a key EU regulatory hurdle, opening the door to wider commercial use.

And running through it all is a bigger question about resilience. As food systems face pressure from climate, supply chains and shifting consumer needs, building flexibility into what we produce and how we produce it is becoming harder to ignore.
