
Some of the most interesting food-tech work this week is happening well beyond the lab. A $10.2 million raise is taking a fat-reducing ingredient technology into international markets, while a CO₂-to-protein platform moves from university research into pilot-scale development. Both now face the practical challenge of proving these technologies can work at scale.
Cost and supply are also back in focus. Europe is considering how to build a more diverse protein supply, while nine years of work on alt-meat price parity shows how difficult it can be to bring costs down far enough for the numbers to work. At the same time, new investment is going into the research and pilot infrastructure needed to help more food technologies move forward.
And the infrastructure around food innovation is growing, too. A new $120 million initiative is putting research, pilot processing and biomanufacturing under one roof, while a new startup cohort is bringing together work in fermentation and functional proteins.
